Valentine's Aftermath

I started out Valentines weekend by weighing myself last Friday.  I have lost 8 lbs in 3 weeks on my new Mediterranean diet.  Woo Hoo!  So far I am finding it pretty easy to do and my Italian friend (Renetta) has been sending me recipes that she thinks we might like.  She sent one the other day for St. Valentines Pasta.  Tim and I have decided to try it Thursday!  Looks so good!  I will remember pictures!  Might even be the Newsletter recipe this week.

This was dinner yesterday for my sweetheart.  Roasted Red Potatoes with Roasted Fresh Asparagus (both with Rosemary) and a smothered Ribeye Steak!  Sautéed Portabella Mushrooms and Sweet Onions.  The one picture I didn't get was the Pan Seared Scallops!  We had them as an appetizer while steaks and veggies were finishing up!  Amazing dinner peeps.  Sometimes you just have to go all out for Love!

Still way negative temperatures here.  Tim says -39 last night and suppose to get to Zero today.  Still in the -30's tonight...BUT...going to be a high of +8 tomorrow!  I hope so!  The one good thing is that the sun has been beautiful this whole time.  Had trouble with the furnace keeping up this morning.  Was 2 degrees cooler in here than I had it set at and it just couldn't make it.  I turned on the oven and opened the door and we started running a small electric heater.  So far, so good!  It is keeping up and not running ALL THE TIME.  Just needed a little boost(I hope).

Here is the other goodie from the weekend.  Red Velvet cake with Vanilla Frosting and mini Choc Chips!  I know...bad girl.  But once again, sometimes you just have to spoil those you love. (and myself!)!!!
