It will just be Tim and I for Thanksgiving this year.  That is ok!  The kids were all up here this last weekend helping with butchering.  This is my butcher!  This is my "Porky" (Josh Ames).  He is our "son" and has been in our family since he was a short little boy with pudgy cheeks and wire rim glasses.  I have always called him Porky.  He is such a tall, handsome young man now, but he will always be my little "Porkchop".  He actually works in the meat department at Ptaceks in Prescott, WI.  He was a great help this last weekend butchering piggy!  Thanks to Josh, Nick & Melissa for all your work!

Tim and I are having pork chops for Thanksgiving this year.  No big turkey (I will miss of my favs) but since it is just the 2 of us this year no need for a big bird.  Having stuffed mushroom caps, salad, pork chops, roasted broccoli and roasted red potatoes.  And don't forget the PUMPKIN PIE!  I must have pumpkin pie!  The only Thanksgiving staple I cannot do without!

Although "Black Friday" looms I will probably be rendering pork fat into lard.  We are having the hams and bacon done for us this time, so I have the time and energy to render.  Tim is really looking forward to it.  I think it will be pretty easy and not a big deal, so I am looking forward to it also.  Something new!  So, pork fat rendering and Christmas decorating this weekend.  Priceless!  LOL!
