A big weekend folks! I hope everyone had a safe and happy Holiday Weekend. Blessings to all of the people serving in the Armed Forces to protect us! Blessings to those who have made the ultimate sacrifice, and to those who put themselves in harm's way everyday for our freedom and safety. Besides being a parent, there is no greater calling. (Personal opinion)
I am having a very hard time motivating today. Saturday we went to the lake to visit friends who had rented a cabin for the weekend. Just a day trip, and it was great to see them, but it really tires me out. Sunday was a "catch up" day around here. Tim mowed grass, I did laundry, and then there was yesterday. We have needed rain here. It has been a very dry spring. Storms were coming in and Tim had people to help with bees! He took off to make his rounds to his "bee buddies" and I decided to clean. Trust me...that doesn't happen often. I needed to change over from Winter to Summer clothes, so I started digging into closets and dressers. Now, that may not sound like much, but I was never able to get it done last year. I lived out of my "summer" tote of clothes last year. Winter things never got put away and summer things never got put out. Sad, but true. I just wasn't able to get it done. SO...since Tim was gone I had him put my summer tote up on the bed (easier to get too) and I would work for 1/2 hour then took a 1/2 hour break. I GOT IT DONE! Tote is packed with winter things. All of my summer things are in drawers and hanging up. Coats are in "coat closet". I have a huge garbage bag of good clothes (some have the tags still on them), and everything is clean and folded to donate. I even dusted! I was a woman obsessed! Thanks to God I was able to get it done this year. I know it sounds stupid, but I really felt like I accomplished something yesterday. I am paying for it today with a knee that is so sore I can barely walk. Back & hip are chiming in today too. BUT, I got it done so a few days of suffering are, as I say, "It is what it is!"
When Tim got home I fixed dinner in foil packs for the grill. Brats, shrimp, onions, mushrooms, and tomatoes in Tim's pack (no tomatoes in mine, allergies). He grilled between wonderful thunderstorms, and it was yummy! I put each pack on lettuce lined plates for extra greens, and I used my Homemade Ranch/Honey Dressing! Our dessert was "no bake". I make a chocolate mousse from coconut milk, real organic cocoa, & powdered sugar. I decided yesterday to layer that with graham crackers and marshmallows for a cold S'mores treat. IT WAS HEAVENLY! I don't even like marshmallows (I don't like "sticky" stuff), but this was worth it. I will post recipe soon. I used the marshmallow "fluff" stuff, but I did some research and found homemade marshmallows made with Honey! I am going to make those soon. Tim is the marshmallow freak, so I am sure he will have an opinion! Much better than the processed, corn syrup kind. I HOPE! Worth a try! Picture is of my "S'more Mousses". More rain today and it is still much needed. Garden is loving it!
