I don't know all the history behind St. Patty's Day. Here is what I do know...I have green on this morning, I made Pistachio Fudge, and there will be corned beef dinner tonight with homemade soda bread! One thing I did learn this morning is that the Shamrock stands for the Holy Trinity. One leaf is the the Father our God, one leaf is his son our Savior Christ Jesus, and one leaf is for the Holy Spirit. My Mom was a little "Irish Hillbilly". She was the luckiest at finding 4 leaf clovers. We could be walking through a field of clover and she could just look down and there it would be. Not sure why they call a 4 leaf clover "lucky", I think every 3 leaf shamrock is a blessing.
I buried my little "Irish Hillbilly" Mother on this day 38 years ago. That would have pleased her. For years, in her honor I would drink a beer and have a shot of Irish Whiskey (or 2, 6, 9). Since I don't drink anymore and I make soda bread, not beer bread, I will have a gingerale in her honor today. I worry if she made it to heaven. Then I think what a force of nature she was! I am guessing she might make heaven because hell just wouldn't have her! LOL! Joking peeps. I loved my Mom dearly and she was my best friend. I wish she had been here to meet my husband and our son. She would have loved all the kids & grandkids & great grandkids! I come by the cooking naturally...Food is Love and I learned that from the best!
