Split Pea & Ham Soup Day

I have leftover ham from Easter.  Still pretty chilly here, even with the sunshine. Good time for one of our favorites.  Split Pea and Ham Soup!  Smells so good, and Tim has requested biscuits tonight instead of crackers.  If it were up to me, I would do Cornbread Muffins.  Tim isn't a Cornbread fan, so we usually just do crackers.  But he has requested biscuits tonight, so I will be looking for one of my biscuit recipes to have nice and hot with our soup tonight.  I took a picture of the soup in the crockpot.  I tasted the broth...yes it is wonderful!  Hope everyone is having a great day!  If you have leftover ham and love split peas...this is dinner!

SPLIT PEA & HAM SOUP

1 Bag Split Peas (dry)

1+ Lbs Chopped Ham (not including bone)

1 cup Chopped Carrots

1/2 Sweet Onion

2 Stalks Celery

8 cups Chicken Broth

1 Bay Leaf

2 Tbsp Minced Garlic

1 Tbsp Parsley

1 Tbsp Thyme

Read Split Pea bag directions.  I rinse peas, check for rocks (I always find one).  I don't soak overnight.  I put clean peas in a pan and cover with water about an inch over peas.  Bring to a boil, cover, turn off stove, and let sit for about an hour. Good time to get crockpot out and start soup! 

Place ham bone (or pork hock) in bottom of crockpot. I put 8 cups of chicken broth in crock and add garlic, onion, celery, carrots, parsley, and thyme.  I cut up lots of ham (we like ham) and toss it in crockpot.  I then add the drained peas all around the bone and top off with the bay leaf.  I cook on Hi for about an hour, then turn it to low and simmer about 5 hours.  I stir every couple of hours.  At 6 hours, peas should be done.  I remove bone and add any ham left on it to pot.  Great with crackers, garlic bread, cornbread, or biscuits!  

We get dinner...Bert gets the bone when cooled!
