I did a bunch of cooking/baking this weekend. Did I take any pictures? NOPE! How is it that I always forget that most important element? This picture is not really my Frittata from last night, but it is close. Sausage, mushrooms, spinach, garlic, eggs and of course...a cast iron skillet! Everything made in 1 pan! Have you ever done a Frittata? So easy! So delicious! You can put anything in them. Like breakfast for dinner! I am going to share my favorite recipe here today. ENJOY!
Preheat oven to 350
Place cast iron skillet on stovetop and brown a pound of your choice of sausage. Drain if needed and add sliced mushrooms and 2-3 Tbsp minced garlic. Sautee until mushrooms are heated through and add a bag of fresh spinach. Be sure to keep stirring to not burn the garlic. I incorporate the spinach a little at a time to wilt. Here is my secret...as soon as spinach is wilted sprinkle a little nutmeg in when you salt & pepper! Gives the greens a fresh taste. Not too much, a tsp or so should do it. In a separate bowl, whisk together 8 eggs and 1 cup milk. Pour egg mixture into skillet and turn heat to low. Use a spatula and after a few minutes, go around the pan, pulling the mixture from the sides letting the eggs run in. Do this for about 5 minutes, until eggs are about done running, but not set. Place pan in oven and bake for 15-18 minutes. Eggs should be set and light brown on top. Too long in oven and it will be dry! I sprinkle on just a bit of Parmesan cheese and cut like a pie to serve. Tim likes crackers or toast with his. I just want pie! I make this for dinner and then guess what? We have it leftover for breakfast! Yup...this is a winner folks!
On a side note: We have dear friends and family testing positive for Covid in two different states! No one is exceptionally sick, but have lost taste and smell and tested positive. PLEASE take care of yourself and your loved ones! I am an Election Judge so I will be working tomorrow. If you are "Covid Conscience" I hope you have voted early. I will be with you all if you are getting out to vote tomorrow! Today my mantra is even more important...
