I have a lot of rhubarb in the freezer yet from last year.  With all of us staying home and cleaning things out, I thought I would share this recipe as it is great for any fruit you have that you need to use.  Fresh or frozen!  I am going to post the recipe as I have it written down on my recipe card.  Here is the catcher...I just used rhubarb for all the fruit yesterday.  Don't do that!  I had to add more honey, and the texture is ok, but not what it is usually.  On the plus side...it is really tasty!  Tart, but I was surprised how well it turned out.  Mixing 2-3 different fruits is much better.  A great use of fruit that needs used soon!

1 1/3 cups berries (any berries, raspberries, strawberries, blackberries, blueberries, cherries, etc)

2/3 cups rhubarb (or 2 cups of just berries.  I always have rhubarb!)

2-3 Tbsp Honey (I use 3)

2-3 Tbsp chia seeds (2 Tbsp less set - 3 Tbsp firmer)  I use 3.

Blend and pour in container (I use glass canning jars)

REFRIGERATE!
