No Touch Tuesday

As serious as things have been, they are saying the next 2 weeks will be the worst IF we don't stay away from each other.  This means even family.  Nick was coming up this weekend to pick up some of his things in storage since they moved recently to a bigger place.  NOT HAPPENING!  Today was the first day my Bible Study was cancelled.  If you can absolutely stay at home then STAY AT HOME! People...will you miss a loaf of bread?  Probably.  Is it worth the risk...NO!  I hope by now everyone is ready for the next 2 weeks.  I admit, I am prepared but have been a bit lax about going out and visitors.  (only out to grocery)  For the next 2 weeks...I am a hermit.  Contact with my peeps through social media will be the extent of my endeavours.  I keep everyone in my thoughts and prayers.  

Today I am thinking about Easter.  Jesus arose and saved my soul!  AMEN!  That being said, I haven't worn a dress since my wedding.  A LONG TIME AGO!  But, I bought a new dress for Easter this year.  Of course.  Now I won't get to wear it to Easter Service.  I told a friend yesterday I think Easter morning I will get up and dressed up and take pictures!  Be prepared!

The other thing about Easter is chocolate.  I am going to share one of my favorite chocolate recipes here today.  So easy, so amazing!  Just remember, we are dairy free here.  

Chocolate Pudding

1 can Full Fat Coconut Milk (do not want cream to settle on top)

1/4 cup Organic Cocoa Powder

1 tsp Organic Vanilla

1 cup Powdered Sugar

Open coconut milk.  There should be a thick cream on top.  Scoop out the cream into a bowl.  Try to use as little of the water as possible, but scoop out as much of the cream as possible.  A little water is ok.  Add cocoa and vanilla to bowl and mix together.  Add 1/2 cup of powdered sugar.  Combine. Check sweetness.  Add powdered sugar as needed for your taste.  I started out using the whole cup (makes this almost like a mousse, very thick and sweet).  We loved it thick but over the years I have backed off on the sugar.  I use just a full 1/2 cup of powdered sugar now.  It is sweet enough but not as thick.  Truly more like a pudding.  Pour into 2-3 serving dishes.  Place in fridge for about 3 hours to set.  I have also used this with cake, cookies, cool whip and layered like a dessert.  Or leave in bowl and scoop out a serving as wanted.  Awesome topped with cool whip and grated chocolate!  This is a dessert people!  Make it your own! 

Note: You can use the coconut water left in the can for a smoothie.  Throw in a banana or strawberries (or both).  Can also be used to cook rice for stir-fry.  Will keep in fridge for about a week or so.  I have used it instead of water in baking recipes.  NO WASTE!  I am sure you will find a way to use it. 

I have been using this recipe so long I don't have a picture on file for it. I will try to remember next time I make it.
