I hope everyone had an amazing Mother's Day! I know I did! It was great to travel a bit to see Nick, Melissa, and Josh. Great visit, great food, and I got to finally meet the newest addition to the family, Finn. He is Nick & Melissa's new kitty and he is so sweet! Just a baby at 6 months old. He and Bert did pretty good. Bert is pretty mellow and Tim just had him hang out with him and not chase Finn. By Sunday morning Finn was getting used to Bert, and a bit brave! Got close enough to Bert to get a few little nose swats in! Of course Finn is a little "love bug" and I sure enjoyed that too!
Had a slow start around here today. Tim and I are having a tough time getting around. Both of us a little sore and tired. We stopped on our way home yesterday at Costco's. I was worried about that, but we went right in (everyone must wear masks) only a couple of items I wanted that they were out of, and only 2 items that were limited on quantities. In and out quickly. Actually one of the best experiences at Costco's for me. By the time we got home and got things in and put away, it was time for jammies, a PBJ for dinner (what I wanted!) and bed. We had an order this morning that we put together that they are stopping to pick up this afternoon. A great Monday after a great weekend.
These are my Mother's Day flowers from Josh. Nick did ribeye steaks and corn-on-the-cob on the grill Saturday night. We had homemade Pho on Friday night (a Vietnamese noodle soup. Ours was made with pork), Nick made a fresh scrambler Saturday morning with ham & cilantro - served with english muffins, and steaks on Saturday night. Sunday morning Melissa made french toast sticks in the air fryer. I don't have an air fryer, but they were delicious and crispy. I love crispy! Might have to look into getting one of those. I don't fry much of anything anymore. Most everything is baked. But this might be great, especially in the summer when you don't want to turn on the oven! Anybody have any input on the air fryer? Suggestions always welcomed!
I had 43 emails this morning to catch up on and got it down to 22 I actually had to read. Only takes a few days to get behind! It was a wonderful visit though! So glad we went!
