Big Doc Appt last Friday.  Let's just say it wasn't pretty.  I pouted all weekend, and now I am ready to get onboard to the new way.  Ever heard of the Mediterranean Diet?  I hadn't...and I thought I knew them all!  So, I gave up my favorite food this weekend.  BUTTER!  Do you remember that commercial where that girl takes a bite of a stick of butter?  Nick always says, "That's you Mom"!  Well, I haven't had any butter all weekend.  I have been doing LOTS of research, and I have had good meals/snacks.  I think this is going to be harder on Tim than it is on me, but he has really been doing good on cutting calories and making better choices, so now we are in it together.  Good news is: I lost 8lbs, my sugar was down, A1C was excellent (not on any diabetes meds), and the Polycythemia markers were the same (this is good, not worse).  The diagnosis?  I have had lots of TIA's...and 2 real Lacunar Strokes.  I thought I was doing good, but life sends you those lemons.  My real lemon...50% blockage in left carotid artery.  My heart is perfect.  No other blockages.  Actually the blockage is not causing the type of strokes I am having.  BUT it could cause major other problems.  So New Diet...New Meds...another check in 6 months.  Hopefully I can avoid surgery.  

This is for dinner tonight.  Baked white fish on a bed of asparagus with a spinach pesto sauce (tomatoes for Tim, non for me).  I like basil, but love spinach so I am substituting!  I will let you know how it tastes.  I made a homemade hummus yesterday with black beans (hate chickpeas).  It was really good, and on my diet plan.  Tim enjoyed it too!  Here is how serious I am this time...I had toast with olive oil, hard boiled egg on it with garlic powder(no salt) for breakfast.  It was really good!  Bye Bye Butter!
