Mediterranean Apple Cake

Tim was having sugar cravings after the double fudge brownies this last weekend.  I had 1 (and 1 bite) but I was a good girl (mostly) and stuck to my diet.  The Mediterranean diet does not have many sweets included.  After some research yesterday (and some apples I needed to use) I found this wonderful little cake.  Only 130 calories per serving!  No butter or oil in the batter!  It is a spongy cake, with a wonderful flavor and for only 1/3 cup of sugar (I used organic) it was sweet enough.  Tim liked it too!  The recipe did call for a honey drizzle if not sweet enough, which Tim did and I refrained.  I sliced it in 8 pieces when cooled so each piece is cut to size for the 130 calories. Not the best cake I have ever made, but it was a great way to use up some apples I had and curb a sweet tooth.  We will be trying this one again.  The recipe was pretty plain, so I added a splash of vanilla and cinnamon.  Really set it off!  Almost 3 weeks and still NO BUTTER for me!  I never would have thought it possible.

-23 here this morning.  Tonight and Thursday night it is going to be in the -40's...actually temperature!  It is cold, but the sun has been out and just beautiful this week.  I think I would rather have COLD sunny days, then warmer dreary days.  My car started yesterday.  Going to wait till the sun warms up the car a bit and probably make a small grocery run today before the real arctic sets in.  No relief in sight for the cold.  Was hoping to make church this Sunday?
