I am working on my 2nd post about my health. I have all of my medical records here, and going through them...well, it's a bit depressing. NOT what we need right now! SO, a friend of mine sent me this wonderful cookie recipe. She thought it might be from WW2 when everything was rationed? I baked these yesterday and they are fabulous! Got kids at home? These are a great "little ones" recipe!
Quarantine Peanut Butter Cookies
Preheat oven to 325
1 cup sugar (I use organic)
1 cup peanut butter (your choice: sunbutter, almond, regular)
1 egg
Mix together and place peanut butter balls on cookie sheet. Press down with fork. These do spread and rise a little! Place a couple inches apart on cookie sheet. Bake 10-12 minutes (I did just a little over 10). Cool on rack. Makes about 18 cookies.
