Frittata and Rain

We had a wonderful Frittata last night for dinner.  It was so good, that I dove in and forgot to take a picture!  That being said, there was a small piece left, so I took a picture of that and hopefully it is ok.  Frittatas are easy and 1 pan, but it does take 8 eggs!  I had 3 dozen eggs, so not worried about using eggs.  This is my recipe for our favorite Frittata, but you can literally put anything in it.  We usually do homemade garlic bread with ours.  Hints on that after recipe.  Great for breakfast, but we love it for dinner.

Tammy's Frittata

I use a cast iron skillet since you can do this all in 1 pan and put it directly in the oven.  Preheat oven to 350'  Coat skillet with 3 Tbsp olive oil.

1 lb Pork Sausage (pork, turkey, spicy, whatever you like)

8 oz. Sliced Mushrooms (I use Bella's)

1 box frozen Chopped Spinach (9 oz)

8 eggs

1/2 cup Milk (I use Unsweetened Coconut Milk)

3 Tbsp Minced Garlic

1/4 cup Parmesan Cheese

Pepper to taste (I never add extra salt to anything)


Coat pan with oil.  On medium heat on top of stove, brown sausage.  Remove sausage from pan (I drain on paper towel on paper plate) and brown mushrooms in pan.  I put spinach in microwave while mushrooms are browning.  When mushrooms are done, add sausage back in and drain (as much as possible) spinach.  Add spinach to pan and turn heat to low.  Stir well to combine ingredients.

In a large mixing bowl: Add eggs, milk, garlic, cheese, and pepper.  Whisk well.

Add egg mixture to pan.  DO NOT STIR.  Leave pan on stovetop for 5-7 minutes.  As mixture firms up around edges of pan, pull edges in and let egg mixture run into sides.  I do this about every minute.  Eggs do not have to be cooked, but there won't be much runny egg on top.

Turn off stove top and place pan in oven for about 16-18 minutes.  Eggs will be cooked.  Add more cheese on top before serving if desired.

I use toast for our garlic bread.  Just toast your favorite bread.  While bread is toasting, put 2-3 Tbsp of butter in small cup with garlic juice and garlic granules.  I do not measure garlic...use to your taste!  Put cup in microwave for a few seconds to melt butter.  Use immediately on hot toast.  I brush it on.  Easy for the 2 of us and great flavor.  Much better than frozen garlic bread.

This week has been very nice.  In the 50's and sunny 3 days in a row!  Today we have rain.  It is still in the 40's though so most of the snow is melting fast!  With the ground starting to open up, I heard lots of geese this morning.  Last weekend we still had lots of snow.  Today, just snow ridges where the mounds were from plowing.  I can almost feel spring. Time to research my garden needs!
