All pigs were done by 1pm yesterday and when the kids took off, Tim and I finished our fresh sausage grinding and packing. With clean-up we were taking a break by 4:30pm. It was a great weekend. Things went much better than I had even hoped! Everyone pitched in, and made the work fun & easy! Tim is hoping next time he can get the "skinning" down better, but it still went really well. I even held up better physically than I thought I would! I am a little sore, but not debilitated!
I saved out a package of our fresh sausage for breakfast this morning. I use my own spices (salt, pepper, garlic, sage, thyme, paprika) for the breakfast sausage. It was fabulous! Best sausage I have had. We are going to do a package of chops tonight. Can't wait!
Being a Holiday week, I will probably only post today and Wednesday. I will post a recipe for those on our email subscription list on Friday, but taking a little time off. We are not going anywhere or having anyone over on Thursday for a "Turkey Funeral". It is going to be nice weather, so Tim and I are going to start Christmas decorating. I am looking forward to it this year! Wish us luck! LOL!
