This photo is from 3 years ago. One of my favorite peeps, Miss Edna, came to visit the farm. She had never been on a 4 wheeler. The weather was much nicer in this picture than it is today! Just hovering at freezing today with rain and fog. Tim says the porch has ice. I am staying put today! I was going to post another "Health" blog, but it is just too dark a day for that. I just got off the phone with Miss Edna (about 1 1/2 hrs worth of yakking) and the day is slipping by fast. Why is it when we have the most time it seems to slip away faster? It was a great visit today, but I am having a hard time getting any work done :)
Fish Friday here. Going to have Alaskan caught Halibut (thanks to our neighbors) baked with a Garlic/Ginger sauce. So good! The sauce works well with any white fish or even chicken or pork. Just doing a salad with the fish, and I am going to try a new recipe tonight for Easy No Yeast Dinner Rolls. I got this from a friend and have to try it on this cold and rainy day. Hopefully I will remember to take pictures! Posting Garlic/Ginger Sauce here today.
1 stick melted butter (1/2 cup)
2 Tbsp Olive Oil
1 Tbsp Dill (Scant Tbsp)
1-2 Tbsp Ginger
2 Tbsp Minced Garlic (or garlic juice)
Mix well. Marinate fish, pork, chicken. Can also be used to saute or as a brush on sauce for grilling. We like more ginger on pork, less on fish. I pour marinade over fish in baking dish and let marinate 1/2hr before baking. I leave marinade in pan for baking. So Good! Tim always pours the extra sauce over his fish. Try it and then work with the amounts on how you like it. I used 2 Tbsp Dill once because Tim really loves dill. Way too much! We love the extra Tbsp Ginger on chicken and pork, but tone it down on the fish. Again, cooking is very personal! Make it your own! Start out with small amounts and add to taste! Enjoy!
