Creamy Chicken Enchiladas

Comfort food is upon us!  It has been freezing or below for several nights and highs in the low 60's.  Although the sun looks nice, it is pretty chilly folks!  My winter hibernation feed is starting...I can feel it.  I want pasta and mashed potatoes, and gooey hot dishes!  This is a winner around here.  I make it with shredded chicken, but it can be made with hamburger or shredded beef or pork.  So, So Creamy!  I usually only post on Mon/Wed/Fri but I took Monday off so I am sneaking this goodie in here for you.  I have a class again this afternoon (every Thursday) so going to get this off to you and prepare for class.  Tomorrow's Newsletter has a great new soup recipe coming.  Sign up for my weekly newsletter on for a "honey" recipe goodie every Friday!  Enjoy!

Creamy Enchiladas

2 lbs shredded chicken (I shred a roasted store chicken), or use hamburger

2 Large cans Roasted Mild Green Chilies

8-10 LARGE flour Tortillas

1 1/2 cups Milk

1 Large can Cream of Chicken Soup (Cream of Mushroom if beef)

1 8 oz. Container of Sour Cream

2-3 cups Shredded Cheddar Cheese

Directions:    Grease an 11x13 pan and preheat oven to 350'.  Place shredded chicken in large pot (or saute hamburger).  Warm chicken and put in green chilies (do not drain chilies), milk, and cream of chicken soup.  When warmed together, add in sour cream and blend in.  Remove pot from heat.  Have tortillas and cheese ready!  I do a quick assembly.  Put a little of the sauce in the bottom of the pan. (think lasagna) I hold a tortilla and put filling into shell, using my hand as a "well" (I use a large stirring spoon) Usually just need 1 big spoonful.  Lay tortilla down and add a sprinkle of cheese in.  Fold like a burrito and line bottom of pan with rolled tortillas.  I can usually get 6 down 1 side, then 2-3 length ways next to them.  Cover tortillas with sauce and top with rest of the cheese.  Place pan on large cooking sheet!  It may overflow!  This will keep your oven clean.  Place pan in oven and bake for 40-45 minutes.  SO CREAMY!  Almost melt in your mouth!  A side salad and you have dinner!  Quick & easy. Leftovers tonight!
