Christmas Cake

This is the last piece of my Red Velvet Christmas Cake left!  It was something new for me and it didn't turn out as expected...but boy is it good!  I took it to our Bible Study Christmas yesterday and it was a hit!  It was a Bundt cake with a cream cheese peppermint filling, BUT the peppermint filling was too heavy and it fell in the cake pan and stuck to it.  When I turned the cake over on the cake plate, only about 3/4 of the cake came out.  Tim scraped the stuck cake out of the pan and ate it right away!  The cake still looked good, so I frosted it and crushed candy canes for on top.  Cream cheese frosting, of course!  So moist!  So the big fail was actually a big success.  I always do "birthday" cake on Christmas Eve for Jesus.  I think this will be the winner this year.  (Yes, we light candles and pray and sing)!

Now that all the gifts that need mailed are sent off, I can finally concentrate on getting my decorations up and cleaning!  I am so excited to have the kids (late 20 year olds) coming for Christmas.  Lots of food, lots of fun, lots of LOVE.  Merry Christmas to me.  It truly is what every Mom wants for the Holidays!

So, I am taking the rest of the year off.  I have been a good girl posting and keeping up with you all and I appreciate your following along.  This will be my last post until we are done with 2020 and into the Happy New Year.  For those of you on our email list for Do This Honey, I will post a last recipe this Friday.

2020 has been a struggle.  But if you are reading this you are probably warm, safe, and fed.  I pray for us all in the New Year.  May Covid evaporate, may we be able to hug again, and to LOVE everyone in person!  May masks become a picture in a history book.
