Healthy Lasagna

Posted by Tammy Chapman on

I stopped making Lasagna about 10 years ago when I developed an allergy to acidic foods (tomatoes being one of them), and Tim discovered he was lactose intolerant.  This is the first year I have been able to get him to eat zucchini!  He loves it roasted like steak fries with dry ranch dressing on them, and he loves them raw with dry ranch dressing on them.  Are you seeing his new addiction to dry ranch dressing?  Over the years as I have grown accustomed to our dietary needs and given up many foods, but I have realized that I...

Summer Slipping Away

Posted by Tammy Chapman on

I hope you all had a great Labor Day Weekend.  We did!  Good Food, went for a nice drive, and finished up a few things around home.  Picture here is of my Cauliflower Potatoe Salad.  I use cauliflower instead of potatoes.  So good, and a great, light way to finish summer.   It has been in the 40's at nights now for about a week.  I put all fresh hummingbird food out in my feeders on Friday.  Saw a few birds Saturday...but by Sunday and the last few days just about 1 a day.  Probably stragglers coming through migrating.  I am...

Cool Summer Nights

It was 44' here last night.  A bit chilly considering it is still SUMMER!  I am trying to plan some bar-b-que food for this weekend, and all I can think about is Chili this morning. Temps during the day are mid 70's...which is perfect!  But we haven't kicked the heat on yet so it is pretty chilly in the house this morning.  I am bundled up like I do when it is -30 out.  Trying to plan "end of the summer" eats to celebrate the weekend is tough when your fingers are so cold you can barely type!  LOL!  So...

New Feeding Area

Posted by Tammy Chapman on

Funny thing about ants...they will use their dead comrades to make a bridge to get to my feeder!  Only worked a couple of days until there were enough dead ants in the moat to make a bridge.  Sick little things!  SO...yesterday I cleaned it up and put fresh food in it and moved it out of the tree to a tall shepherds hook!  It is right next to the tree I took it out of, but I didn't see any hummers on it yesterday.  They were there this morning though, so I am hoping this will work.  I did put...

All about the Blueberries

Posted by Tammy Chapman on

This has been a hard year for fruit.  That being said I do have some frozen wild blueberries that were just calling my name this week.  Since I have A/C now, I can use my oven and not heat up the house!  That means I can bake...and bake I did.  I came across this recipe and have never heard of Blueberry Upside Down Cake!  I had to try it!  I took it to Bible Study and it was a hit!  Served with a little Real Whipped Cream (or Cool Whip) or just plain!  It is amazing!  My cake looked just...
