Lazy Summer

Posted by Tammy Chapman on

It has been a busy...yet lazy summer.  Still trying to get heat pump working so we have our central air.  Down to getting a new thermostat for the house and I think we will be ready to turn it on!  I hope it is done soon, because we have survived some sweltering days and it is looking like a very hot & sunny weekend.  I plan everything around the heat.  I only run the dishwasher at night...I plan meals where I don't have to use the oven...I do a load of laundry at night and put it in the dryer...

Healthier Style

We had fish tacos Wednesday night.  First time I had made them...not our favorite.  If not for the cilantro/lime sauce they would have been a total flop.  The good thing is that I made homemade coleslaw to go with our fish tacos.  Although we had fish last night, I am going to make a tuna noodle casserole tonight (Thursday) and use the leftover coleslaw in it.  Less pasta (only making 1/2 of usual pasta), more vegetables.  I am going to make regular tuna noodle casserole with no dressing then put the coleslaw in and see if I need anymore mayo,...

This picture is of my recipe book I made up with all my info for my "special" diet.  Do you think I can find it?  NOPE.  I know most of the actual recipes, but I had lots of handwritten cards with notes on them for special things that I did, or worked better for certain substitutions.  Our diet here is a little crazy.  I don't do gluten, acids (fruits or vinegars), processed foods, etc etc etc.  Tim has to get in the special diet too with his lactose intolerance (no dairy).  I can do most vegetables (peas are a no...too...

Medical Good News

So, for a change today I got great news!  Tim had a dentist appt. and I haven't been to a dentist in 14 years...so he made an appt. for me to go along today.  Poor Timmy had to have a tooth pulled.  I got a full set of x-rays, a cleaning, and neither the hygienist or the doc could find anything wrong with my teeth!  WOO HOO!  They couldn't believe that I don't even use fluoride.  I haven't used fluoride toothpaste in about 10 years, and we have well water here so no water treatments.  My Dad was 70 when...
